Here is an easy recipe that is very tasty.  You could potentially use any cheese that you prefer.  I love to pour this delicious sauce over cooked broccoli or cauliflower for a delicious side dish.  This is also wonderful in casseroles that call for a tasty cheese sauce.  This recipe rivals any high-carb cheese sauce, in my opinion.  I would not dream of making it the old-fashioned way, when this way is so much nicer.


*Spreadable cream cheese may be used to make this sauce. It will be a slightly thinner sauce. Buy the spreadable cream cheese in the bigger tubs, if possible.  Double the recipe when needed for covering a very large dish of vegetables, such as the Vegetable Au Gratin Casserole.

My husband and I are back from a lovely month's vacation in beautiful Cape Town, South Africa. It is not named the most beautiful city in the world for nothing. CHECK THIS OUT!  Tim Noakes is the new Dr. Atkins (of South Africa) in a way.  Dr. Atkins suffered many similar insults and attacks.  Where would we all be today without Dr. Atkins? He was a very brave man who knew he had right on his side! Here is an online store that opened up for people in Johannesburg.  It is true that the Banting diet is a bit different to Atkins.  It is higher in fat and lower in protein.  Personally, I like a moderate low-carb diet these days and I do very well on it, and don't feel deprived.  

4 oz regular cream cheese (125 g)
3 tbsp butter (35 mL)
1/cup Low-Carb Milk, OR (75 mL)
  whipping cream, OR almond milk
1/tsp salt, OR to taste (1 mL)
1/tsp white pepper (0.5 mL)
2/cup shredded Monterey Jack, OR (150 mL)
  Cheddar cheese

In nonstick pan or pot, combine cream cheese, butter, Low-Carb Milk, OR whipping cream, OR almond milk, salt and white pepper.  Whisk occasionally.  Stir in Monterey Jack, OR Cheddar cheese until it melts and sauce is smooth.  If necessary, add a tablespoon (15 mL) of water.

Yield:  1 cup (250 mL)
2 tbsp (30 mL) per serving
